Spicy Sichuan sweet and sour dressing

Ingredients

Black sesame oil 30ml,
Cooking oil 30ml
Dry chilies, 5 tablespoons
Flower pepper powder, 2 teaspoons
Sweet and sour sauce: vinegar 60ml, sugar 4 tablespoons, soy sauce 3 tablespoons

Instructions


1. In a bowl, mix the sweet and sour sauce ingredients.

2. In a saucepan, flavor the oil with the dry chilies at low medium heat.

3. When the chilies turn brown and crispy, add the flower pepper powder and sweet and sour sauce and turn off the heat.

Spicy Sichuan flower pepper oil

Ingredients


Cooking oil, 140ml
Black sesame oil, 10ml
Dry chili flakes, 20g
Flower pepper powder, 10g
Star anise, 1 clove
White sesame seeds, 1 teaspoon
Salt, ½ teaspoon

Instructions


1. In a saucepan, heat the oils to 80° C, add all the ingredients and turn off the heat.

Sesame paste

Ingredients

Black or white roasted sesame seeds, ½ cup
Roasted peanuts, ½ cup
Black sugar, 1 tablespoon
Oil, 120ml
Salt 1 teaspoon
Instructions

1.Grind the sesame seeds and peanuts in a food processor until very fine.
2.Add the rest of the ingredients and blend well.

Green onion pancake

Preparing the green onion

180g green onion, 1 teaspoon salt
 
Instructions
 
Chop the green onion very finely, and mix it well with the salt. Let the mixture sit for 15 minutes, while the salt makes the moisture come out of the onion. Squeeze more water out of the onion by wrapping it tightly in cloth (for example, a clean tea towel).

Soy milk flavoured with black sugar, black beans, and black sesame

Ingredients

½ cup of black beans and 1 cup of water
1~2 tablesppoons of roasted black sesame seeds
1 tablespoon of black sugar
4 cups of water

Instructions

1. Soak the beans with 1 cup of water for about 8 hours or over night.

2. Blend a cup of soaked beans and roasted black sesame seeds with another 4 cups of water in a food processor or a fruit mixer. Use a high speed setting to blend it as fine as possible. Then drain the liquid from it into a saucepan.

Sweet Sticky Sesame Dumplings

This a traditional Chinese dish eaten during Lantern Festival in Taiwan, China and Hong Kong. Actually, they're so good you can (non-traditionally) eat them any time you want.

Ingredients

1 cup glutinous rice flour (sticky rice flour)
half cup of water
sesame powder mixed with a little water
sugar to taste
finely powdered peanut
