Soy bean milk
Ingredients
1 tablespoon of sugar or black sugar
4 cups of water
Instructions
If you use a standard food processor:
1. Soak the beans with 1 cup of water for about 8 hours or overnight.
2. Blend a cup of soaked beans with another 4 cups of water in a food processor or a fruit mixer. Use a high speed setting to blend it as fine as possible. Then drain it with a cloth.
3. Bring the soy bean milk to the boil in a saucepan. Sweeten with the sugar.
If you use a super high-powered blender (e.g. Vitamix):
1. Soak the beans with 1 cup of water for about 8 hours or overnight. Steam the soaked beans.
2. Blend the soaked beans with the sugar and 4 cups of water (use hot water if you want the soybean milk to be hot) in the blender. Use a high-speed setting to blend it as fine as possible.
Notes
1. Soy bean milk can be drunk hot or cold. You can warm it in a saucepan, and cool it in the fridge or with ice.
2. You can use the soy bean milk in place of regular milk in many situations.
3. Black beans can be used instead of soy beans to make a similar drink.
4. If you want to, you can flavor the soy bean milk with cocoa, chocolate powder, black sesame, nuts, or almost any flavor you like.
5. Flavor with fruit to make milkshakes or milk drinks.
6. When using the soy bean milk as a soup broth, don't add sugar.
